Recipe: Stir-Fry Pizza

Paleo dinner night and I needed something…different. Something fun. So I made this up. It was very easy and enjoyed by many.



Stir-Fry Pizza

1 spaghetti squash

Assorted pizza-topping veggies – I used spinach, zucchini, bell pepper, onion, garlic, mushrooms, & olives.

Pepperoni or Italian Sausage (Deck Family Farm has nitrate free options that are so tasty…)

Olive oil, oregano, salt, pepper

1-2 cups of tomato/pizza sauce

Parmesan or mozzarella (or a blend) to sprinkle

Roast the spaghetti squash.

In a large frying pan orwok, heat some olive oil on med-high. Cook any sausage, add in the garlic and onions, and oregano.

Add in the rest of the veggies. Cook them all the way through. If you are using pepperoni, cut it into bite-size pieces and add it a few minutes before you're ready to serve up. Salt and pepper to taste.

Serve a large scoop of the spaghetti squash. Top it with an equally large scoop of the stir-fry, pour tomato sauce over the top, and sprinkle with cheese.

Obviously you can use any favorite pizza toppings. The stir-fry could also be served over pasta, or another grain. Anyway you serve it, this turned out to be a fun twist on a familiar meal.
